Meals anyone?

Ok I have been cooking a lot more lately. I have always said I hated cooking and loved baking. I still love baking. I am discovering how fun it is to cook and try new things. I think my problem was I made the same things over and over again, hardly used the best ingredients, and just plain didn't care.
Lately, I have been really focused on being healthier. I have felt SO SO much better. My IBS is pretty much under conrtol, and I have more energy. Who knew, right? ;)
I love it when a meal calls for a lot of prep work...but only on days I have the time. I make meals for the freezer too, so I have them at any time. I make a lot of crockpot meals. I always thought crockpot meals were not too healthy, but again I was so ignorant. My sister in law would be so proud that my taste buds have "matured." I like onions, peppers, tomatoes, squash, zucchini, and drumroll please.....Broccoli. I did not like these things a couple of years ago. In fact, being pregnant with Carson is when I began to CRAVE some of them. Weird, I know. But I love them all now. My cravings have changed from cookies to grapes and other fruit. Don't get me wrong, I still love baked goods! I am having a blast cooking and am loving the affects it has on me and my family! Here are some things I have made that have been a hit with everyone!

Ok, seriously, these are "good eats!" I made the chicken nuggets last night and we loved them. My fries need some perfecting. That taco salad...simply amazing. Chad loved it. It makes tons of chili, so I froze all the rest and we got two more meals out of it! I am obsessed with quinoa, couscous, and edamame. Paige wants edamame for dinner everynight. I have made over 20 new recipes over the past 2 months. Some have been a total bust, but that's expected. And I must say, on those green beans, I made them for my friends and one told me that she hates green beans, but absolutely loved those. They are tasty. So I hope I got your mouth watering!
